They're like the unicorn of fruit! These pink pineapples are started to show up in grocery stores around the country and I can't wait to get my hands on one.

So how do the pineapples get that extra sweet and perfectly pink flesh? We can thank science and genetic modification for that. Don't worry -- "Genetically Modified" isn't always a bad, unhealthy thing.

According to the FDA, the pink pineapple created by Del Monte Fresh Produce (DMFP) is totally safe to eat because the pink color is created by an enzyme already widely consumed by people.

DMFP’s new pineapple has been genetically engineered to produce lower levels of the enzymes already in conventional pineapple that convert the pink pigment lycopene to the yellow pigment beta carotene. Lycopene is the pigment that makes tomatoes red and watermelons pink, so it is commonly and safely consumed.
